This is such a quick and easy dish that the whole family will gobble up. Serve with your favourite sides, we love it with steamed greens and some roast potatoes.

1.4 kg whole chicken, butterflied
70 g butter, softened
4 cloves garlic, chopped
4 pieces preserved lemon, pith removed
Small bunch of thyme
Preheat the oven to 200°C. Line a pan with baking paper. Gently massage the butter into the chicken, under the skin and over the skin. Massage the olive oil over the outside of chicken and season with salt and pepper. Place garlic cloves, preserved lemon and thyme under the skin of the breast and drumsticks. Place the chicken onto the prepared pan and cook until the juices run clear when pierced at the thickest part (approximately 40 minutes).
