Diverse and exciting dishes

Bursting with a balance of salty, sweet, spicy and sour flavours, Tony’s diverse Asian seafood menu should not be missed. Recipes include: freshly shucked oysters topped with a delicious crab salad and tangy Thai red nam jim dipping sauce; thinly sliced raw kingfish with coconut, chilli and lemongrass; steamed prawn dumplings with kombu (sea weed) and Chinese XO seafood sauce; and finally, popular Singapore mud crab stir fried in a sweet and savoury tomato chilli based sauce, served with steamed gai lan (Chinese broccoli) and noodles.

Tony Twichett

Executive Chef, Taxi Dining Room

Tony has been cooking since he was a boy, moving to Melbourne at the age of 17 to work at Luciano’s, before starting his apprenticeship at The Stokehouse. His passion for modern Thai and Chinese cuisine is well known and he continually explores his love of this cuisine through travel. He is currently the Executive Chef at Taxi Kitchen at Federation Square. More
