    Culinary traditions from the Catalan region

    Matt’s Spanish menu cleverly combines popular ingredients with vivid flavours and simple cooking techniques: summer sangria, the classic Spanish red wine punch; chargrilled padron peppers; pedro ximenez olives with sage;  two pinchos – prawn with mojo verde (a green herb, garlic, vinegar olive oil and cumin sauce) and grilled Moorish spiced lamb; from southern Valencia, a seafood paella made with bomba rice, seafood, spices, onion, garlic, capsicum, tomatoes and rich fish stock; and a mixed leafy green salad with a tangy saffron dressing.
