    Classic mountain dishes

    Nicky is proud of her Austrian heritage and her childhood memories of classic mountain dishes still inspire her work. In this class you will learn how to make locally caught smoked river trout with dill, horseradish crème and spaetzli (traditional soft egg noodle dumplings); roast duck neck sausage made from scratch, with speck and quick pickled cucumber salad tossed with riesling vinaigrette; and to finish, a chocolate kugelhopf cake swirled with gooey chocolate.
