Geraldine’s recipes include pork and prawn dumplings cooked two ways, either simmered to accompany black vinegar, chilli and coriander or crispy fried with soy dipping sauce; sang choi bau, crisp lettuce cups filled with stir fried finely diced chicken, seafood, water chestnuts and shitake mushrooms, flavoured with oyster sauce, ginger and sesame, topped with crunchy roast peanuts; organic whole chicken, simmered, steeped in flavoursome sweet soy master stock and served with steamed jasmine rice; marinated and roasted sweet Char Sui pork shoulder, sliced and tossed with stir-fried fine egg noodles, bok choy, snow peas, chilli, hoisin sauce and sesame oil; and to finish, a platter of delicious summer Asian fruits.
