Nicky’s love of Italian cuisine and her Austrian heritage inspire some her favourite restaurant dishes. Recipes include: Piedmont beef tartare with pecorino, celery leaf and horseradish; locally caught smoked trout and spätzle (traditional soft egg noodle dumplings); seared snapper with bagna cauda, a warm anchovy and garlic sauce served with a seasonal accompaniment; and to finish, an impressive kugelhopf cake.
