    A Crete Island Feast

    A celebration of Greek flavours and traditions

    Emma’s celebratory menu is inspired by her travels to Crete, a Greek island with its own distinctive flavours and food traditions. Recipes include: fried feta in kataifi pastry, drizzled with thyme honey; papoutsakia, little fried eggplant ‘shoes’ filled with tomato, garlic, ricotta, feta, herbs and olive oil; polenta dusted fried calamari with rye rusks, and tomato salad; delicious, thick and creamy Tzatziki; giant lima beans (gigantes) and diced pork belly braised with onions, celery, herbs, garlic and spices; chorta sliced potatoes topped with cavolo nero kale, lemon juice and spices, baked ‘confit style’ in olive oil; a refreshing palate cleanser with yoghurt and coarsely grated candied carrot; and traditional galaktoboureko, layers of crispy filo pastry filled with semolina custard bathed in honey syrup.  To top it all off, enjoy monastery almond shortbread.
