In this class, you will learn the secrets behind Simon’s modern approach to classic dishes including: creamy chickpea hummus and homemade pita bread; beetroot goat’s cheese terrine with walnut dressing; coriander cured trout with garlic emulsion; cholent, a traditional Jewish slow-cooked stew with beef, marrow, bean and barley, served with a side of cauliflower, tahini and pomegranate salad; and to finish, an impressive medjool date kanafeh, made with sweet cheese and katafi pastry soaked in scented sugar syrup, served with tahini caramel and vanilla ice cream.
