    Join Nicky’s class to learn an easy, step-by-step method to de-bone a whole duck, followed by a variety of simple dishes that will show you how to use the different cuts. Recipes include: making duck sausage to compliment a lentil, roast pear and walnut salad with sherry vinaigrette; a light, summer style carpaccio made with cooked duck breast, mustard fruit vinaigrette, capers and cauliflower; a Moroccan spiced duck leg braise with pearled barley and medjool dates, served with a crisp fennel, and orange salad; and to finish, a fresh, fabulous surprise dessert.
