Robert’s easy menu features: warm goat’s cheese, mustard vinaigrette and caramelised pear salad with toasted baguette croutes; Breton-style scallops poached in white wine with creamy mashed potato and a light cheese sauce; an easy version of cassoulet with Toulouse-style sausage, diced pork, bacon and haricot beans; and finally, Robert’s take on the famous apple tarte Tatin: brown sugar, spice and dried fruit stuffed apples wrapped and baked in puff pastry, served warm with dollops of cream.
