Comforting winter dishes

Expand your repertoire and knowledge of day-to-day Greek cuisine with nourishing, comforting winter dishes that are more than just souvlaki and baklava. Niki will show you how to make: fakes soupa, an easy, hearty lentil soup with vegetables and herbs; homemade traditional country-style bread; melitzanes papoutsakia, baked stuffed eggplants filled with beef mince cooked in a spiced and herb tomato sauce, topped with béchamel sauce and melting golden cheese; roasted lemon, oregano and olive oil seasoned potatoes; and to finish, warm galaktopoureko, a traditional dessert pie with baked  layers of crisp golden filo pastry, filled with creamy semolina custard and bathed in sweet syrup.

Greek Cypriot born, Niki is the founder of My Greek Kitchen Cooking School. She was born into a family of passionate cooks who cherish the importance of traditional food and strive to keep it alive. Her classes revolve around what is known as the Mediterranean Diet today.
