    For the love of lamb

    From char-grilled loins to slow cooked shoulders

    Graze on a selection of cured meats while Paul demonstrates how to butcher a whole lamb, explaining how to select, prepare and cook each of the cuts perfectly. He will then show you how to use these cuts to create delicious dishes including char-grilled lamb loin with a quinoa, freekah and goat’s cheese salad with a pomegranate vinaigrette, and braised lamb shoulder and roasted leg, served with a simple jus-gras pan sauce, perfect crispy roast potatoes and classic French-style braised peas. And keeping with the theme, there will be an irresistible sheep’s milk and honey parfait with a warm granola crumb for dessert.
