Dinner party favourites

In this class, Nicky shares a collection of favourite recipes she loves to cook when planning a ‘French Classics’ dinner party. Her menu features: savoury gougeres, baked pastry puffs made with choux dough mixed with cheese and a hint of nutmeg; twice baked goat’s cheese soufflé with a simple seasonal salad; from the south west France, a flavoursome fish, local mussel and crabmeat Basquaise-style soup, finished with piment d’espellette (chilli pepper) and served with rouille and toasted croutons; and to finish, baked apple clafoutis, a delicious classic dessert flan served warm with whipped cream fraiche.
