Daniel’s recipes include guacamole with fresh pico de galo salsa; Korean beef tartare with nashi pear and black sesame crisps; Baja fried fish tacos with chipotle aioli; pork and prawn dumplings with Szechuan black vinegar; grilled tiger prawns with pomelo and green nham jim; mildly spiced Thai massaman curry with winter lamb, pearl onions and kipfler potatoes, served with steamed rice; and for dessert, amazing salted caramel churros tacos with hazelnut praline.
