On his recent trip, David discovered Hawaiian cuisine features strong Asian influences with quirky nods to mainland America. Recipes include ahi poke – raw tuna marinated with sesame, soy, red onion and chilli served on sushi rice; grilled miso marinated hapuka with lime butter; char siu lamb cutlets with kimchi and lup cheong fried rice; and little pineapple up-side-down cakes.
