An imaginative meat free menu

Bryce’s imaginative, meat-free menu cleverly combines interesting flavours with the season’s bountiful supply of vegetables and fruits. Recipes include: avocado and Jerusalem artichoke salad with celery, mace and blood orange olive oil; smoked broccoli stem with broccoli and lemon puree, caper, ginger and mild and fruity Aleppo chilli flakes; native to France, tarte tatin made with caramelised leeks on a crisp, golden-brown pastry base with honey, sauvignon blanc and pistachio cream; and to finish, irresistibly delicious rhubarb, almond and strawberry trifle dessert. A class not to be missed!

About the Chef

Bryce Edwards

Head Chef, Transformer

Bryce started his career some 20 years ago in Melbourne. Since then he has traveled extensively to work in countries such as France, England and Canada. His focus on fresh, seasonal plant based cuisine has come from time spent in the markets of southern France and Italy. Currently he is Head Chef at the popular vegetarian/vegan restaurant Transformer, in a converted warehouse in Fitzroy.
