Recipes include: burrata with pickled date, green chilli and pecorino; baked gnocchi with taleggio and white wine sauce served with walnuts and bitter leaves; seared snapper and bagna cauda, a warm anchovy and garlic sauce, served with shaved savoy cabbage salad; and, to finish Earl Grey infused pannacotta and baked pears.
