    Japanese Secret Ingredients

    Unique, umami rich flavours

    In this class Ai will explore some Japanese speciality ingredients, explaining how to use them to add authentic flavours to modern Japanese recipes. Using yuzu kosho (a paste made with chillies, salt and yuzu juice) and fresh fish, Ai will show you how to make a Japanese carpaccio with a yuzukosyo dressing. Then using miso and koji (a live culture used to ferment soy sauce, miso and sake), Ai will demonstrate centuries old Japanese curing techniques that create a unique, umami rich marinade for grilled pork, fish and vegetables.
