Jo’s recipes are easy and perfect for preparing ahead: Mexican smashed avocado guacamole with fried plantain chips or smashed tostones; Argentinian crisply fried vegetarian black bean, garlic and thyme filled empanadas served with Jo’s version of chimichurri sauce; Cuban inspired papa rellenas, crumbed potato croquettes filled with a mix of spiced beef, green olive, carrot and tomato, deep fried to perfection and served with hot pepper salsa picante; and finally, skewered Brazilian guava chicken, marinated in spices, lime juice and olive oil, grilled and brushed with an aromatic guava fruit glaze.
