If you have a passion for Italian-style fresh cheeses, this specialty cheese making class is a must! Giorgio, an awarding winning cheesemaker, will first show you how to make fresh mozzarella, burrata (money bag-style mozzarella pouches filled with delicate strings of stretched curd and cream), and primo sale (a semi soft, milky cheese) from scratch. Giorgio will then be joined by his That’s Amore colleague, chef Dario Di Clerico, who will prepare recipes featuring the cheeses including: bocconcini served with tomato water (strained liquid from very ripe blended tomatoes), basil and watercress; autumn burratina (small burrata) served with a selection of seasonal produce such as spiced roast pumpkin, chestnut ragu, and pickled pears or persimmons; and spaghetti with primo sale and Market fresh seafood.
