Join Shin, an expertly trained sushi chef, to learn about the tools needed and hygiene required for making successful sushi at home including how to prepare the rice and how to fillet fish. You will then get hands-on with Shin guiding you through essential techniques and recipes: vinegared sushi rice; how to skilfully slice fish for sushi; make nigari sushi, raw fish served over hand pressed rice; futomaki, traditional rolls, with rice and fillings wrapped in dried roasted seaweed (nori); and uramaki, inside out rolls. Enjoy the sushi with soy sauce, wasabi and pickled ginger and either green tea or a glass of wine.

About the Chef

Shin Hara

Owner/Chef, Gourmet Shin

Shin, originally from Gifu Prefecture in Central Japan, has worked around the globe as a trained sushi chef. After working in Kyoto he moved to California where for over 10 years he gained experience in both traditional and fine dining sushi restaurants. He then worked in various European restaurants including Maya Bay in Monaco, Mykonos Island off the coast of Greece and Reykjavik in Iceland. After moving to Melbourne in 2016, Shin worked at Mr Miyagi on Chapel Street for one year before starting Gourmet Shin, his own business specialising in Japanese food experiences around the city, including private sushi dinners and sushi making classes.
