You will then get hands-on with Shin guiding you through essential techniques and recipes: vinegared sushi rice; how to skilfully slice fish for sushi; make nigari sushi, raw fish served over hand pressed rice; futomaki, traditional rolls, with rice and fillings wrapped in dried roasted seaweed (nori); and uramaki, inside out rolls. Enjoy the sushi with soy sauce, wasabi and pickled ginger and either green tea or a glass of wine.
