    Essential techniques and knife skills

    In this class you will learn the essential cooking techniques and knife skills required to successfully prepare a range of delicious French classics. Recipes include: hearty Parisian bistro-style caramelised onion soup with bubbling Gruyere cheese toasts; light and smooth chicken liver parfait with soused vegetables; confit of duck with a warm salad of puy lentils, lardons and button onions; and for dessert, baked tarte normande, a speciality from north west France, featuring sliced apples, almonds and sugar, topped with creamy egg custard, served with Chantilly cream.
