Traditional cuisines around the Mediterranean have inspired Alex to create his own modern take on regional seafood dishes. His menu features: tarama dip made with cod’s roe, bread, olive oil, lemon juice and Turkish isot chilli, served with warm flat bread; baked scallops on shell with saffron and parmesan infused sauce; rockling, potato and celery chowder with gorgonzola cheese, oven baked in soufflé pots; Turkish manti (ravioli) in a smoked paprika and clove spiced tomato sauce, topped with crisp, kataifi pastry wrapped prawns; and for a final treat, Baklava at First Sight, Alex’s unique take on this traditional recipe
