Using the bounty of summer’s fresh seasonal produce you will learn how to make: Bellota’s specialist charcuterie and house-made giardiniera vegetables with sourdough baguette; sorrel, goat’s curd and radicchio tart using pate brisee pastry; tender lamb cutlets with mojo verde, a green chilli, cumin and fresh coriander sauce, and Esclavida, a grilled capsicum, onion and eggplant salad; and for dessert, light and tart lemon mousse with luscious berries.
