Using the best seasonal ingredients, you will learn how to create deliciously light recipes including:  freshly shucked oysters with traditional Japanese ponzu sauce; Thai style fish cakes with peanut chilli dressing, lettuce and fresh herbs; Vietnamese chargrilled prawns with nouc cham and fresh mango; pan-fried barramundi with fragrant spicy and tangy Malaysian assam laksa, local mussels, fresh cucumber and herbs; and to finish, tropical fruits with home-made coconut ice cream.
