    Murat’s menu reflects his unique, modern approach to traditional Turkish fare. Passionate about cooking with only the best seasonal produce, Murat uses nostalgic flavours combined with simple, modern cooking techniques. Join him to learn how to make: midye dolma, stuffed mussels with rice and currants; kalamar, grilled calamari with burnt pepper and crispy bulgur grains; muhlama, saffron coloured fresh pine mushrooms with rich, white cheese from Turkey’s ezine region and maize (corn); yanak, braised Wagyu beef cheek with pearl barley and cokelek, a light, unsalted cheese made from yoghurt;  and to finish, kabak tatlisi, a delicious, classic candied pumpkin dessert with burnt tahini mousse and crystallized pepitas.
