Dai’s menu introduces modern twists to authentic Vietnamese food. Featuring signature favourites and new dishes from Uncle, recipes include: crispy young rice prawn banh mi with avocado, Sriracha mayo and dill; a spin on caprese salad with burrata and heirloom tomatoes, pickled papaya, holy basil, puffed wild rice and barrel-aged fish sauce; ox cheek braised in plum sauce with spiced carrot puree and goji berries, served with crisp lettuce and fragrant herbs; and for dessert, an interpretation of Vietnamese iced coffee featuring coffee jelly, ice cream and sesame crisps.
