Dai’s menu introduces modern twists to authentic Vietnamese cuisine. Featuring favourite signature dishes using seasonal ingredients, aromatic fresh herbs and simple techniques, Dai’s recipes include: burrata with heirloom tomatoes with pickled papaya, puffed wild rice and barrel aged fish sauce; fried chicken tenderloin bao with spicy pickle, Vietnamese mint and condiments; twice cooked Wagyu brisket with sweet potato puree and fresh pomelo salad with bean sprouts and fragrant herbs; and for a deliciously simple dessert, seasonal fruit salad with cooked tapioca pearls, young fresh coconut and ice cream.

An enthusiastic and talented Chef, Dai gained overseas experience with the Terence Conran Hotel Group. He returned to Melbourne as Head Chef at The Pelican for six years and then at Dandelion for a year, before opening his first restaurant Uncle in St Kilda. Following the success of his first restaurant he opened a second venue at Collin St Melbourne’s CBD. More
