In this class, Michael introduces the true spirit of Louisiana and Caribbean cooking with their individual unique spices and culinary traditions. Recipes include: Puerto Rican ceviche with coconut and lime oil; shrimp remoulade with fried green tomatoes; Cajun spiced blackened fish; and, a traditional Trinidad goat curry with roti and pico de gallo salsa.
Whether you want to explore a new cuisine, learn some new techniques or simply expand your cooking repertoire, our highly experienced instructors will teach you how to prepare delicious dishes that are guaranteed to impress.

Michael’s interests took him to Louisiana in 2009 to experience the New Orleans annual ‘Tales of Cocktail’ event and in 2011 the French Quarter Jazz Festival. On his return, he started a successful mobile Creole food truck and recently opened Po'Boy Quarter. More
