    Master rough puff pastry and make delicious recipes

    Join Damien to master the art of making rough puff pastry, puff pastry’s easier to make, but just as delicious cousin. In this class you will learn about the art of lamination, how different types of flour and fats will give different results, ideal baking temperatures, and the pastry’s many, versatile uses. With Damien as your guide, you will then use the pastry to make recipes including: traditional Cornish meat and vegetable pasties, a throwback to Damian’s family heritage; a provincial French olive and onion tart, served with a classic vinaigrette tossed winter garden salad; and for something sweet, Damian will make the French classic, upside-down caramelised apple tarte tatin.
