    Exotic Mediterranean and Middle Eastern cuisine

    Traditional cuisines across the Mediterranean and Middle East have inspired Alex’s modern take on regional dishes. Recipes include Lebanese chocolate-infused smoked hummus with dates and golden brown pine nuts; Spanish-style fried pastry rolls filled with baccala and caramelised vegetables and served with smoked paprika dip; a Greek  fisherman’s seafood chowder with an avgolemono (egg and lemon sauce) twist; Italian homemade fresh pasta with mixed mushrooms, porcini, gorgonzola cream and shaved truffle; and to finish, Sutlac, a popular Turkish baked rice pudding with anise caramelised figs and burnt sugar topping.
