    vivid flavours from the Mediterranean coast and mountains

    Inspired by trips to Barcelona and surrounding regions, Amy’s Catalonian menu combines popular ingredients and vivid flavours from the both the Mediterranean coast and mountains. Recipes feature: Fideua, a colourful paella style dish made with noodles, fresh seafood and saffron; pimentos del pequills rellenos de bacalao, small, red roasted Spanish peppers filled with whipped salt cod; butifara con judias, traditional Catalan pork sausage with white beans; escalivalda, roasted, smoky flavoured vegetable dish with peppers, eggplant, tomatoes and onion; and finally, traditional crema catalana, an orange rind and cinnamon infused cream dessert, cooked in a cazuela and finished with a crust of caramelised sugar.
