Mediterranean flavours and classic French cooking techniques

Nicky’s love of seasonal produce, Mediterranean flavours and classic French cooking techniques have inspired this delicious seafood menu. Recipes feature: seared sardines with currants, feta cheese, harissa vinaigrette and crisp pangrattato (breadcrumbs);  puff pastry pies filled with plump mussels, potato, dill and capers served with a simple salad; whiting with a quick salmon roe beurre blanc sauce and roast fennel; and finally, clams with fregola (a Sardinian pasta), pesto and ricotta saltata.
