David’s recipes are also ideal for sharing when catering for a crowd and include: rockling fillets steamed and wrapped in banana leaves with Thai spices; fresh crab meat with cucumber and miso- sesame dressed Japanese soba noodles; grilled Chinese five spice seasoned calamari in a warm salad; and finally, coconut cream poached Blue Eye tossed with zesty chilli- lime dressing, mango, fresh coconut and Thai herbs.
