Recipes include grilled prawn rice paper rolls with kaffir lime leaf and lemongrass nuoc cham dipping sauce; Thai basil and chilli seasoned clams steamed in Hanoi beer with chilli salt dipping sauce; grilled whole fish with fragrant turmeric paste in banana leaf with bun noodles and herbs; and to finish, scallop green mango salad in a coconut lime dressing.
