Good Italian cooking is about making the most of the seasons, using ingredients when they are abundant and at their peak. Pia’s summer menu does exactly this, with simple ingredients and techniques that belie the complexity of flavors in the final dish. Learn how to make: chickpea bruschetta; hand rolled cavatelli pasta tossed in garlic, zucchini, olive oil and topped with pangrattato and lemon zest; the Tuscan classic, panzanella salad filled with juicy, sweet tomatoes and aromatic basil; and for dessert, a proper baked ricotta cheesecake with summer fruits. Buon appetito!
