    Tracey’s delicious Vietnamese barbecue and salad recipes will add unique flavours and textures to your summer meal repertoire. Recipes include: classic nouc cham dipping sauce; charred beef and green peppercorns in banana leaf, thinly sliced, wrapped in rice paper rolls with pineapple, green banana, rice vermicelli noodles, chilli and herbs; seasoned and grilled baby chicken with kaffir lime leaves, served with lime, chilli and salt; char-grilled, prawn and pork mince filled betel leaves, served in crisp lettuce cups with herbs and dipping sauce; and, piquant squid and pomelo salad with carrot, dill, mint, coriander, chilli and fried shallots.
