    A modern take on traditional flavours

    Matteo’s menu reflects his Sicilian and Southern Italian background but with his own modern take on traditional flavours. In this class you will learn to prepare: coffee cured trout with pickled seasonal vegetables, squid ink crisp and lime; whipped ricotta and spinach ravioli, confit yolk, sage and walnut cream; wet roasted lamb with potato, green olives and lemon, served over white polenta; and for dessert, an irresistible espresso and Sicilian averna liqueur pannacotta with pistachio brittle.
