Recipes include:  anchoa tapa with goat’s curd, capers and tomato gel and a torched king salmon tapa;  juicy scallops served two ways in a ceviche and pan-fried; red wine braised beef cheeks with horseradish potato puree.  To finish, a surprise dessert highlighting our native bush flavours.
