Matteo’s cooking style is influenced by classic Italian hospitality and the abundant meals shared with his Sicilian family. Matteo’s regional recipes with a modern twist include: Lombardy’s mild and tangy taleggio cheese croquettes with walnut cream and prosciutto di parma; Tuscan pappardelle pasta coated with a delicious wild mushroom, lemon and veal ragu; Nonna’s rice-stuffed roast chicken with young potatoes, shallots and pan jus, served with seasonal greens; and to finish, Sicilian favourite, cannoli, filled with sweetened whipped ricotta, cedro and pistachio.

About the Chef

Matteo Tine

Head Chef/Owner, Mr Ottorino

Matteo is passionate about his Sicilian and Southern Italian heritage being a first generation Australian and grandson of one of Melbourne’s first pastry chefs. Following 11 years at Grossi Florentino, developing his culinary skills Matteo is now the proud owner and Head Chef of his own restaurant, Mr Ottorino named after his Nonno. His philosophy is to combine his culinary expertise and ‘break the mould’ of stereotyped pasta and pizza menus by pointing the spotlight on a variety of inherited traditional family recipes from villages across Southern Italy.
