Join Shin, an expertly trained sushi Chef, for an opportunity to take your sushi making to the next level. Shin will talk you through the tools and hygiene required for making successful sushi and what kinds of rice and nori (seaweed) to purchase. You will then get hands-on, with Shin guiding you through essential techniques and recipes: vinegared sushi rice; how to slice snapper and salmon for sushi and prepare the vegetables; nigiri sushi, raw fish served over pressed rice; uramaki, inside out sushi rolls with rice on the outside and the nori and vegetable filling on the inside, and an alternative version topped with slices of snapper and salmon; and tempura prawn, which you will then use to make rolls with rice on the outside and a nori wrapped prawn on the inside.

About the Chef

Shin Hara

Owner/Chef, Gourmet Shin

Shin, originally from Gifu Prefecture in Central Japan, has worked around the globe as a trained sushi chef. After working in Kyoto he moved to California where for over 10 years he gained experience in both traditional and fine dining sushi restaurants. He then worked in various European restaurants including Maya Bay in Monaco, Mykonos Island off the coast of Greece and Reykjavik in Iceland. After moving to Melbourne in 2016, Shin worked at Mr Miyagi on Chapel Street for one year before starting Gourmet Shin, his own business specialising in Japanese food experiences around the city, including private sushi dinners and sushi making classes.
