    Learn how to master essential cooking techniques that will help you become a more confident cook. Each one of John’s delicious recipes will use a key technique that you will find yourself using over and over again: poach salmon for a French nicoise salad variation made with potato, cannellini beans, seasonal vegetables and a tangy yoghurt, lime and horseradish dressed; sear on a grill and then oven bake tamari, honey and ginger spiced chicken fillets to go with pan fried shallots, steamed rice and seasonal Asian vegetables: sear and oven roast rosemary seasoned spring lamb rumps to serve with crisp baked potatoes  and pan-made red wine and mustard sauce; parboil and bake a mix of Tuscan style vegetables tossed with garlic, herb and olive oil; and finally, grill the perfect beef steak to compliment any grain or leafy green salad.
