In this class, Niki will share her secrets and show you how to prepare: marinated, pan-fried chicken gyros served with warm pita bread; popular tzatziki, a delicious, natural yoghurt, cucumber and herb dip or sauce for grilled meats; oven baked biftekia, aromatic beef rissoles infused with fresh herbs, onion and feta; quick and easy rice pilaf pan-cooked in chicken stock; roasted lemon, oregano and olive oil seasoned potatoes; horiatiki salad, a medley of cut ripe tomatoes, cucumber, red onion, topped with Kalamata olives, feta cheese and a light oregano seasoned, oil and vinegar dressing; and for a final treat, classic kourabiedes, shortbreads dusted with layers of icing sugar that are buttery, not too sweet, and crumbly at every bite.
