Celebrate Alex’s Greek heritage

Returning from overseas for a visit, celebrate Alex’s Greek heritage with this exciting, modern menu. Alex’s recipes will include:  red pepper hummus with iced vegetable crudité; end of summer tomato salad with smashed cooked potatoes, broccoli florets and feta;  roast local rockling with a silverbeet, feta brine, oregano butter and lime sauce; beef and sides to share with yoghurt shallot dip, roast broccoli stalks, and grilled peppers with garlic and vinegar;  and to finish, irresistible namelaka, (Japanese for smooth and creamy), a chilled mixture of milk chocolate ganache, nutmeg and buttermilk, served with luscious, scorched figs and almonds.

About the Chef

Alex Xinis

Consultant/Chef, Modern Greek Food Group

Alex is an experienced international chef and hospitality consultant who has a passion and natural talent for cooking that has taken him around the world to work alongside many of the most acclaimed chefs in the industry. 
Alex began his career and quickly proved himself as a front-runner working in the award winning Isis Brasserie in his hometown of Brisbane. In 2011 Alex decided deepen his understanding of the Greek culture and food, and moved to Greece to the two Michelin star restaurant, Funky Gourmet.
When Alex returned to Australia he found his place in the restaurant group Made Establishment as the Sous Chef of George Calombaris’ flagship restaurant, The Press Club. In 2016, he took on the role of Head Chef, and the restaurant secured its two-hat status in The Age Good Food Guide awards.  Alex held Head Chef positions in Hellenic Republic Restaurants throughout his time with the group including opening new restaurants.
Alex is currently a consultant for the Modern Greek Food Group that operates Opso in London and Dubai, Pittabun in London and Funky Gourmet in Athens and various other venues in Australia and internationally.
