Recipes feature: smorrebrod, sliced Danish rye bread with freshly cooked diced kipfler potatoes, lightly cured small prawns, fermented cabbage and mayonnaise; pan-fried barramundi on white onion puree, with flash pickled baby carrots and onions, and sago pearls in roast chicken stock; and for dessert, a vegan liquorice crème brulee with summer fresh raspberries and crystalized white chocolate.
