Traditional cuisines around the Mediterranean Sea have inspired Alex’s inventive modern take on its regional dishes. Recipes feature: fried Greek tiger prawns wrapped in kataifi pastry with wasabi aioli and melon coulis; Spanish pan-fried octopus with golden raisin salsa and red capsicum puree; Greek oven-braised aromatic chestnut and lamb stifado stew with fried feta cheese; raki infused smoked goat with caramelized leek and manti,a Turkish style ravioli; and for dessert, Alex’s version of the Greek-Turkish, ekmek kataifi masticka, a baked kataifi pastry syrup cake with thick creamy custard, whipped cream and pistachio topping.
