Inspired by a recent culinary visit to France and the Champagne region, David’s menu showcases a selection of dishes that match sparkling wines perfectly. Recipes start with beetroot cured salmon with crème fraiche followed by briny oyster soup with sparkling chardonnay and root vegetables; lamb loin rolled in a crepe with mushroom duxelle, wrapped in brioche dough, baked and served with lamb jus; and to finish the famous Biscuit Rose de Reims, a traditional pink biscuit enjoyed with sparkling wine.
