    Vivid flavours and authentic ingredients

    Inspired by her recent travels, Amy’s menu combines popular ingredients and vivid flavours from Asturias, Navarra, Madrid, and southern Andalucia. Recipes feature: traditional tortilla de patata (potato omelette); salmorejo, a refreshing chilled tomato, bread, olive oil and garlic soup with chunks of jamon serrano and crumbled hard-boiled egg; pincho de puplo, octopus and potato pinchos with olive oil, paprika and sea salt; cachopo, crumbed and fried tender fillets of veal sandwiched together with melting cheese and jamon; and, bocadillo de calamares, an ionic Madrid bread roll snack with crumbed fried calamari rings, homemade aioli, lemon and pickled green guindillas (chilies).
