In this class Van will show you creative, flavour-packed vegetarian salad options that are much more exciting than a limp lettuce leaf and a few slices of tomato. Each recipe is hearty enough to be served as main meal, leaving you feeling energized and satisfied. Recipes include: black rice salad with snake beans, miso sauce, pomegranate and roasted white sesame seeds; quinoa salad with roasted veggies, tofu cubes and a tahini dressing; raw beets, carrots, kohl rabi, sprouting pulses and grilled aubergine tossed in a lime and mustard dressing; and cold sweet potato noodle salad with braised seiten, dried lily flowers, woodear fungus and julienned carrots with sweet soy.
