Using aromatic fresh herbs, seasonal ingredients and simple techniques, Dai introduces new twists to authentic Vietnamese cuisine in a menu featuring: torched salmon rice paper roll with classic sweet, sour, salty, spicy nuoc cham dipping sauce; fried chicken tenderloin in steamed soft bao (bun) with pickled cucumber pickle and condiments; lemongrass and turmeric Wagyu beef shin curry with roast cauliflower, served with charred eggplant in spicy black vinegar dressing and fragrant jasmine rice; and for a deliciously different dessert, seasonal fruit with cooked tapioca pearls, coconut foam and tangy lemon meringue.

An enthusiastic and talented Chef, Dai gained overseas experience with the Terence Conran Hotel Group. He returned to Melbourne as Head Chef at The Pelican for six years and then at Dandelion for a year, before opening his first restaurant Uncle in St Kilda. Following the success of his first restaurant he opened a second venue at Collin St Melbourne’s CBD. More
